Breakfast Blueberry Cookies

Ingredients

1. 1 cup rolled oats

2. 1 large banana

3. 1/4 tsp monk fruit extract

4. 1/4 cup nut butter

5. 1 flax egg ( Mix 1 tbsp flaxseed meal + 2 1/2 tbsp water and let it sit for 5 minutes)

6. 1 tsp cinnamon

7. 1/2 cup blueberries

Instructions

  1. Add the banana, nut butter, monk fruit extract, and flax egg into a medium mixing bowl. Mix it well, mashing on the banana to get the chunks as small as possible.

  2. Add the oats and cinnamon; stir until combined.

  3. Fold in the blueberries.

  4. Use 2 tbsp to form the cookie dough balls. Bake at 350°F for 8 minutes and delight!
